A traditional American chicken curry recipe where the chicken chunks are parboiled along with potato cubes or other veggies until tender. Simmered in a broth of coconut milk, along with the aroma of cardamom, cloves and curry leaves. A great chicken gravy recipe to cook during winters for a casual dinner at home as a light side dish. Ingredients of Potato Chicken Stew
- 1 Kg chicken
- 4 tsp white vinegar
- 1 Potato (cubed)
- 1 onion, chopped
- 1 tsp garlic, chopped
- 1 tsp ginger, chopped
- 2 green chilies, chopped
- 4 Green cardamoms
- 4-5 Cloves
- 1 inch cinnamon
- 2 cups coconut milk
- 8-10 Curry leaves
- 4 tsp oil
- to taste salt
How to Make Potato Chicken Stew
1.Boil the chicken in a pressure cooker along with white vinegar, salt, potatoes and water. Keep aside after one whistle.
2.Heat three tea spoons of oil in a pan. Saute the onion, garlic, ginger and green chilies till the onion turns transparent.
3.Lightly pound the cardamoms, cloves and cinnamon. Add the spices to the sauteed onions.
4.Add the boiled chicken to the onions along with the coconut milk. Cook well till the chicken is tender.
Prepare the tadka:
1.Heat a tea spoon of oil in another pan. Add the curry leaves to it. Stir well till the curry leaves begin to curl.
2.Add the tadka to the chicken and serve hot.
